PURPOSE

The purpose of this document is to outline the procedures that must be enacted in order to safely provide leftover catered foods to clients for later, at-home consumption.

GUIDELINES

1. Leftover Service Prerequisites

• Prior to offering leftovers, the client must read and sign the Hold Harmless Agreement for Catered Leftover Foods.

• The signed Hold Harmless agreement should be kept in the Records Management System indefinitely.

• Clients must have sufficient refrigerated storage space in which to store leftover foods and have identified an area where leftover foods can be stored safely.

• Leftover catered foods packaged for personal consumption cannot be stored in Compass refrigerators or freezers.

2. Cleaning, Sanitation, and Personal Hygiene

• Follow all personal hygiene, cleaning, and sanitation processes outlined in the Compass FSQA Manual.

3. Service and Temperature Logging

• The temperature of TCS foods should be recorded prior to offering for service. The temperatures of at least two hot and two cold foods should be measured and recorded in the Catering Leftovers Log (QAF-37).

• Hot food must be served at 135°F or above, cold food must be served at 41°F or below.

4. Leftover Handling Procedures

• Reusable or disposable containers intended to hold leftovers should be placed in close proximity to the catering service.

• A sign or sticker with the following message should be placed near the catering area:

In the interest of public health, Dining Services wishes to remind guests that leftover food should be promptly packaged and refrigerated. Leftovers should be kept refrigerated and consumed within two days of receipt. Any foods that are not packaged within two hours of the start of service will be discarded.

• Any leftover catered foods that have not been packaged after two hours should be removed from service and discarded.

• If food is determined to be unsafe to be used as leftovers, discard food immediately.

5. Packaging and Containers

• Packaging and containers for leftovers must be provided by Compass.

• Personal packaging and containers are prohibited.

• Customer packages should be labeled with a sticker with the following statement:

“Be aware that we handle and prepare egg, milk, wheat, shellfish, fish, soy, sesame, peanut and tree nut products, and other potential allergens in the food production areas of our facility.”

6. Compass and Regulatory Approvals and Notification

• Prior to offering catering leftovers, you must obtain written permission from your local health department. Contact your local health department to determine if a variance, or any other permits are required.

• Contact your Corporate Food Safety Manager prior to offering catering leftovers.

HOLD HARMLESS AGREEMENT FOR LEFTOVER CATERED FOODS

1. Food provided for catering service by Unknown keyword: Sector Name ______________________________, hereinafter referred to as “caterer”, will be prepared and served in accordance with Compass Group Food Safety policies and is guaranteed to be in compliance with all applicable local, state, and federal regulations at the immediate time of service.

2. Caterer makes no guarantees to the safety, wholesomeness, or compliance with all applicable local, state, and federal regulations of foods that are not consumed immediately at the time of service. Any foods that are not immediately consumed at the time of service and are packaged or otherwise removed for later consumption (“Leftover Foods”) are the sole responsibility of the client.

3. The client agrees to indemnify and hold harmless Caterer and its employees, representatives, and directors (individually, an “Indemnitee”) from all actions, suits, claims, demands, proceedings, judgments, damages, losses, debts, liabilities, penalties, fines, costs, and expenses, including reasonable attorney’s fees, resulting from:

• Brought or commenced by federal, state or local governmental authorities against any Indemnitee alleging that any foods provided to the Client to or on the order of Caterer did not meet the guarantee set forth in Paragraph 1; and/or

• The handling, packaging, storage, consumption, or possession of Leftover Foods originally prepared by Caterer; and/or

• Personal injury, death, or property damage stemming from the consumption or possession of Leftover Foods originally prepared by Caterer.

Precautions

• Leftovers should be packaged and refrigerated promptly after service. Any perishable food left at room temperatures for more than 2 hours should be discarded. Caterer will not be responsible for providing any refrigerated storage for leftover foods.

• Leftover food should be consumed within two days of initial service.

• If reheating, leftovers should be reheated to 165°F before consuming. Reheated leftovers that are not consumed should be discarded immediately.
